For Episode 6 of King of Tacos, we headed out to find El Zocalo, a local food truck serving up Mexican food around Topeka, Kansas. As we continue our search for the best taco in Topeka, we're discovering more local restaurants and food trucks and finding the dishes that make each one stand out.

El Zocalo quickly caught our attention with its Birria menu, offering everything from Birria tacos to Birria eggrolls and even Birria ramen.

And then there was the consommé.

The flavor was incredible.

The Birria tacos in particular caught us by surprise. They came out of nowhere for us and quickly became one of the most memorable stops we've made so far in our search for the King of Tacos.

EPISODE 6: WHY WE CHOSE EL ZOCALO

When you're searching for the best tacos in Topeka, you can't limit the search to traditional brick-and-mortar restaurants.

Some of the best food in a community can come from local food trucks, and El Zocalo gave us another reason to keep looking beyond the usual spots.

The first thing that stood out was the variety of their Birria menu.

Birria has become incredibly popular with taco lovers, but El Zocalo takes the concept beyond just tacos. Their menu includes Birria tacos, Birria eggrolls, Birria ramen, and more.

That variety alone made El Zocalo an interesting stop on our taco journey.

Then we actually tried the food.

That's when things got serious.

THE BIRRIA TACOS CAME OUT OF NOWHERE

Every King of Tacos episode has a taco that makes us stop and take notice.

At El Zocalo, that happened with the Birria tacos.

We knew we were going to try Birria, but the tacos ended up being a bigger standout than we expected. The combination of the tender Birria, flavorful consommé, and crispy taco shells made for a seriously satisfying bite.

Sometimes a taco doesn't need a lot of explanation.

You take a bite and immediately understand why it belongs in the conversation.

That was our experience with El Zocalo.

DON'T SLEEP ON THE CONSOMMÉ

If you're ordering Birria, the consommé is a big part of the experience.

And El Zocalo's consommé brought serious flavor.

The rich, savory consommé paired perfectly with the Birria tacos and added another layer to the meal. Dipping the tacos into the consommé took an already flavorful taco and made it even better.

For us, this was one of the biggest highlights of the visit.

One of the things we enjoyed about El Zocalo was seeing how many different ways they incorporate Birria into their menu.

Birria eggrolls combine the familiar crispy texture of an eggroll with the rich flavor of Birria, while Birria ramen takes those same flavors in a completely different direction.

One of the best parts of the King of Tacos series has been discovering just how much variety there is in Topeka's local food scene.

Every stop has given us something different.

El Zocalo was another great example. Instead of simply offering another version of the same taco, their Birria-focused menu gave us several different ways to experience one of today's most popular Mexican food dishes.

The Birria tacos were our standout, but the eggrolls and ramen showed just how versatile the menu can be.

And that consommé?

We'll definitely remember that one.

TOPEKA'S TACO COMPETITION CONTINUES

Six episodes into our search for the King of Tacos, we're finding more and more tacos that deserve a place in the conversation.

Vuelve a la Vida impressed us with its steak taco. Rosi's Food brought us chopped carne asada and standout elote. Zoila's Cafe gave us a memorable pork taco and green sauce. Mexicali entered the competition with flavorful Birria tacos. El Centenario gave us an excellent al pastor taco and a standout chorizo taco.

Now El Zocalo has entered the competition with Birria tacos that surprised us, a flavorful consommé, and a menu that takes Birria well beyond the traditional taco.

And we're not finished yet.

There are still plenty of Topeka restaurants and food trucks left to explore.
